Recipes : Class 37 - Victoria Sandwich

Ingredients

• 175g margarine
• 175g caster sugar
• 3 eggs
• 175g self raising flour

Method

1. Cream the margarine & sugar until light & fluffy.
2. Beat in the eggs.
3. Fold in the flour.
4. Grease & line 2 x 18cm cake tins.
5. Divide the mixture between tins.
6. Smooth the tops.
7. Bake in oven 180ºC Gas mark 4 for approx 20-30 min.
8. When cold sandwich together with jam
