Recipes : Class 41 - 6 Shortbread Fingers

Ingredients

This recipe will make approx 20 fingers

  • 225g butter, softened
  • 115g icing sugar
  • 225g plain flour
  • 115g corn flour

Note this recipe will make more than the 6 fingers needed.


Method

  1. Cream butter & icing sugar together until creamy & pale in colour.
  2. Blend in flours until well mixed.
  3. Place mixture into 33 x 23 cm Swiss roll tin, press down mixture evenly, prick with a fork.
  4. Bake in oven 150ºC Gas mark 2 until pale & golden.
  5. Sprinkle with sugar, cut into fingers.
