40 - Chocolate, Walnut & Banana Loaf
Ingredients
- 115g butter
- 175 caster sugar
- 2 large bananas, peeled & mashed
- 2 eggs
- 80g plain flour
- 80g plain wholemeal
- 1 teaspoon bicarb & ground cinnamon
- 5 tablespoons boiling water
- 115g walnut pieces chopped
- 175g milk chocolate chips
Method
- Beat the butter & sugar together until light & creamy.
- Beat
in the bananas then the egg, if the mixture curdles do not worry.
- Fold
in flour bicarb, & cinnamon.
- Stir in the water to produce a soft
mixture.
- Gently fold in walnuts & chocolate chips.
- Spoon the mixture
into a greased lined 900g loaf tin, smooth the top.
- Bake in oven 180ºC
Gas mark 4 for approx1-1½hrs until dark golden in colour & well
risen.
