Recipes : Class 39 - 4 Apricot & Orange Scones

Ingredients

Makes approx 12 scones

  • 450g plain flour
  • pinch of salt
  • 1 teaspoon baking powder
  • 110g margarine
  • 55g caster sugar
  • 1 egg
  • 290ml milk (approx)
  • zest of 1 orange
  • 55-85g dried apricots (chopped)

Method

  1. Mix dry ingredients together, rub in margarine.
  2. Add egg & milk to make a smooth dough.
  3. Add orange zest & apricots
  4. Roll out 2.5cm thick cut into scone shapes
  5. Place on greased baking tray brush with egg wash.
  6. Bake in hot oven 180ºC Gas mark 4 for approx 15-20 minutes until golden brown.
